Aaron Uban
Born in the heartland of Iowa, Chef Aaron embarked on a culinary journey that would take him across the globe and back, all in pursuit of the perfect fusion of flavors: Asian influence blended with a dash of irreverence. With a wide variety of experience ranging from local favorite restaurants like Kincaid's and Kieran's Irish Pub to kitchens at Hotel Ivy and Elliott Park Hotel, Aaron delights diners with dishes that provoke thought and spark conversation. Take a seat at our table and join him on a gastronomic adventure that blends cultures and flavors in ways you've never experienced before.

Evan Knutson
Chef Evan grew up in the farmlands of central Minnesota before moving to Minneapolis. He discovered a passion for cooking when working at various restaurants in the Twin Cities and learned from several diverse and talented chefs. His experiences include opening the Hewing Hotel in the North Loop and the short-lived but well-loved Byte Restaurant. Evan had the opportunity to delve deeply into various world cuisines while banquet chef at the Marquette Hotel and Windows on Minnesota. Bringing an eye for global flavors intertwined with Minnesota roots, Evan is excited to provide thoughtful and engaging culinary offerings at the InterContinental Saint Paul Riverfront and Citizen Restaurant.

Dylan Murphy
Chef Dylan grew up in White Bear Lake, MN starting his culinary journey at a young age. He enjoys experimenting with all of the complex flavors you get working in the kitchen. Dylan has a variety of experience at restaurants around the Twin Cities, including Central Northeast and Momento where he focused on flavors from the Mediterranean. His passion is delivering exceptional weddings, corporate events and other special events for both the InterContinental Saint Paul Riverfront and Citizen Restaurant.
