Chef Mark was raised in a blue-collar neighborhood in Pittsburgh, PA where his love for food and exploration of flavor was born. His mother, an awarded baker, taught him the importance of trying new things and to appreciate the culture that can be shared through food. Mark has been cooking professionally for nearly 30 years, 19 of which in the Twin Cities. He was the Executive Chef at the Marquette Hotel, Chef/Owner of Byte game pub, and Chef at the Guthrie Theatre among others. He has also traveled and cooked all over the world spending time in kitchens in Morocco, Peru and Vietnam, China and Colombia. His cuisine is simple and bold, but his travels give it a grounded yet whimsical flare. Citizen is grateful to have Mark leading its renewed culinary experience.
